Former Glutton Goes Gluten/Lactose-Free

Dear good Lord, what has happened to me?  Okay, so I understand Celiac Disease and I understand farting when you eat to much cheese, but both, come on, really?  So here's my story....I used to be a food writer, life-enthusiast, blah blah, happy happy.  Then I moved home and decided I'm going to grad school and I'm gonna be a therapist.  Then I worked in several places doing what I like to call therapy with another title (counselor).  Then I got stressed out, then I got sad, then the awful happened. I got sick, really sick.  I had stomach problems like an alien was going to pop out of my stomach and say hi to Sigourney Weaver for me.  So they took out my gall bladder and took a tour of my whole digestive tract and said there was mild irritation, but otherwise nothing serious like cancer.  Still, no answers.  I was a throwing up, pooping, farting, can't go anywhere, sick all the time mess.  Finally I got to go to one of those fancy super specialist in Iowa City and they dropped the Hiroshima bomb on my gluttonous lifestyle....guess what, you are allergic to dairy/lactose and gluten.....welcome to hell.  Well I see you and raise you one blog and cooking enthusiast.  I choose to see this as a new opportunity to write about food and do some fun research, get all science-minded, and find out what to do.  I plan to interview nutritionists, doctors, chefs, anyone that is willing to find happy alternatives to feed the beast.  Luckily I found some gluten-free stuffing for Thanksgiving.  So bring it on!
